Banana Oat Muffins
These banana, oat and fruit shape muffins are absolutely delicious AND refined sugar free. I’ve swapped regular sultanas for our Freddie’s Farm fruit shapes – they add the perfect burst of fruitiness (and a sneaky bit of veg too!).
INGREDIENTS
🌾 300g wholemeal spelt flour
🤍 1 tsp bicarbonate of soda
🧂 Pinch of salt
🌺 Dash of vanilla extract
🥣 60g porridge oats
🍌 2 ripe bananas
🍯 125g runny honey, plus extra for drizzling
🤍 284ml yoghurt
🫒 3 tbsp light olive oil
🥚 2 eggs
🍎 100g Freddie’s Farm fruit shapes (or sultanas)
METHOD
Preheat oven to 180°C/Fan. Sift flour, bicarb and salt into a large bowl, add vanilla and stir in 50g of oats (save the rest for topping). Mash 1½ bananas in a separate bowl and add your mashed banana, olive oil, yoghurt and honey. Give it a mix, then add the eggs, mix again and add your Freddie’s Farm fruit shapes or sultanas. Divide between muffin cases, top each with a banana slice, a sprinkle of the remaining oats and a honey drizzle, then bake for 18-20 minutes until risen and golden.
This recipe makes 12 muffins, perfect for lunchboxes or after-school snacks!
